Strawberry Pepper Jam Vinaigrette - ⅓ cup red wine vinegar, ¼ cup olive oil or vegetable oil, 3 tablespoons strawberry pepper jam, 1 small shallot (1-2 tablespoons), minced 1 teaspoon stone ground mustard, ¼ teaspoon salt, ¼ teaspoon fresh ground black pepper. Shake vigorously and serve immediately.
Raspberry Chipotle BBQ Chicken - Mix your favorite BBQ sauce (Head Country is what I use) with Raspberry Chipotle 50/50 and use to baste chicken, ribs, or chops on the grill.
Charcuterie Board - Place all your favorite appetizers on your board or platter and put everything close together. Fruit, breads, crackers, and cheese compliment each other and are popular charcuterie options. Pepper jam goes well with any soft cheese like cream cheese, brie, and havarti.
Grilled Salmon & Peach Pepper Jam - Season salmon with salt and pepper and place on a foil lined baking sheet. Cook under broiler for 5-7 minutes, then baste with pepper jam and place back under broiler until salmon is done to your liking and the jam begins to caramelize.
Cheddar Thumbprints With Pepper Jam - 2 cups shredded cheese, 1 cup all purpose flour, 6 tablespoons cold butter chopped, salt & pepper, garlic powder & cayenne pepper (optional) Place all ingredients in a food processor and blend until a dough comes together. Wrap dough in plastic wrap and chill 30 mins. Place 1 1/2" dough balls on cookie sheet and cook at 400 for ten minutes. Using the end of a spoon, make an indention and spoon pepper jam in and allow to cool.
Roasted Pork Loin & Peach Pepper Jam - Season pork loin or purchase pre-marinated and seasoned loin of your choice. Sear with oil on all sides until brown, then remove and place on foil sheet and add pats of butter to the top and seal with foil. Add your wrapped loin to a foil lined baking sheet and cook until internal temperature is 150 (about 25 minutes). Allow loin to rest for at least 5 minutes before cutting, then cut against the grain and serve with pepper jam on top.
Raspberry Chipotle Chicken Thighs - Season bone in skin on chicken thighs with your favorite seasoning, then cook as desired in the oven or grill. At the 15 minute and 30 minute intervals, add raspberry chipotle jam and 5 minutes before taking off, finish chicken under the broiler to crisp up the skin and caramelize a little of the jam.
Use alone or with soft cheese on kolaches, bread, biscuits, cornbread, or morning toast.
