Easy Strawberry Lemonade Poke Cake

This cake is so easy and delicious! It's light, fluffy, and super easy to throw together! You could change up the cake flavor or even the jam flavor and try yellow cake, white cake, strawberry cake, or even angel food!
Ingredients

Southern Roots Sisters Strawberry Lemonade Jam

1 lemon box cake mix

3 eggs

1/2 c vegetable oil

1 c milk or water

1/2 c chopped strawberries

1 container whipped topping (Cool Whip)

Directions
Cake
Preheat oven to 350F
Mix together lemon cake mix, 3 eggs, 1/2 c vegetable oil, and 1 c milk (or water) in mixer for 3 minutes. Pour ingredients into 9x13 pan sprayed with nonstick cooking spray.
Sprinkle your 1/2 c chopped strawberries all over the top of the cake. They will sink down into the cake as it cooks.
Cook for 35 minutes or until toothpick inserted comes out clean.
While warm, take the back of a wooden spoon and poke holes all over the cake like a grid about 2 inches apart.
Filling
Pour 3/4 of the Strawberry Lemonade Jam jar into a bowl and pour 3 tablespoons of hot water in and stir vigorously until combined. Pour over the top of the cake aiming for the holes. Allow to cool for 1 hour.
Icing
Spread container of whipped topping all over cake and plop the remaining 1/4 jar of Strawberry Lemonade Jam on top and swirl in with a knife. Alternatively, you could mix these together in a bowl if desired then apply icing. Garnish with strawberries if desired.
